The wild west coast, local fruit shops ... and chickens! These are just a few of my favourite things about my new home. My neighbours have four healthy happy chooks who roam around in their huge pen, complete with exclusive chicken-only veggie garden and the rolls royce of chicken coops. Over the holidays I've been babysitting them, getting a bit over-delighted every day when I venture out and discover new, perfect eggs! This whole supermarket-in-your-backyard thing just never gets old.
On busy mornings I usually opt for green smoothies and other vegan breakkies, but this weekend these bright healthy eggs just couldn't go to waste. So here it is, the easiest, fastest pancakes you'll ever make. And just two wholesome ingredients!
banana egg pancakes
This Mixture will serve 2 people lightly. I ate a few while I was making them so I ended up doubling my batch to keep the punters happy!
Blend together eggs and banana (I used a hand held electric mixer to make the mixture smooth and fluffy. If you don't have one, mash banana with fork and stir in whisked eggs).
Heat a pan to medium heat with a nob of coconut oil or butter. Pour pikelet-sized amounts into the pan and wait for bubbles to form before flipping. In my experience these pancakes cook a lot faster than regular pancakes, so watch them carefully. Also, use the most non-stick pan you have, be bold and flip fast - sometimes they stick.
5 Minutes and your done! Serve with Strawberries, natural maple or honey (or nothing, they don't really need extra sweetness), and coconut yoghurt (made by fermenting coconut cream with a probiotic capsule -see here for Eleanor's Petite Kitchen recipe.
