Wow, two pancake recipes in a row! It must be something about summer weekends, they just make me want pancakes! If you prefer high protein high energy goodness, last week's egg and banana pancakes are perfect for you. If you fancy something filling, savoury that releases lasting energy throughout the day, give these Buckwheat Pancakes a go (I'll show you how to make Buckwheat flour, too!). In usual Health Yeah style, both recipes are gluten free, dairy free and refined sugar free.
The wild west coast, local fruit shops ... and chickens! These are just a few of my favourite things about my new home. My neighbours have four healthy happy chooks who roam around in their huge pen, complete with exclusive chicken-only veggie garden and the rolls royce of chicken coops. Over the holidays I've been babysitting them, getting a bit over-delighted every day when I venture out and discover new, perfect eggs! This whole supermarket-in-your-backyard thing just never gets old.
On busy mornings I usually opt for green smoothies and other vegan breakkies, but this weekend these bright healthy eggs just couldn't go to waste. So here it is, the easiest, fastest pancakes you'll ever make. And just two wholesome ingredients! I am such a sucker for banana loaf. Some of the best things in life reside in this recipe: banana, coconut, cinnamon, walnuts, nutmeg...and none of the questionable things, like refined sugar or gluten. It's the perfect way to use up old bananas, and coconut flour gives the loaf a dense, coconutty flavour. Nothing makes me happier than a slice of this on a sunny afternoon with a spiced chai latte and some good company! Heavenly!
The recipe is GAPS and Paleo-friendly, and can be made with or without dairy, simply substitute butter for coconut oil.
I'm a huge fan of dairy-free milks - they are a delicious, healthy, plant-based alternative to cow's milk and have solid nutritional profiles. They work a treat in cereal, in your smoothies, desserts and baking. You can pick them up at the supermarket, but homemade milk will always be the safer, cheaper, more nutritious option. Why? Non-dairy milk cartons have obscenely long shelf lives and contain ingredients like starches, sugars and preservatives. Plus, it turns out the 'natural flavouring' in them is often not that natural at all.

But I've put them through the "Coffee Test" a) does it froth up well and b) taste good with coffee - a plant-powered coffee is an improvement on cows milk. |
