This meal is easy, delicious and full of flavour. But that's not all. Packed with detoxifying veggies, leafy greens and one of natures most alkalizing grains, millet, it'll leave you feeling satiated, nourished and not the slightest bit guilty.
Millet is one of the few grains that is alkalizing to the body. It is also gluten-free, non-allergenic, has a low glycemic index and is rich in protein, magnesium, calcium, niacin, copper, manganese, fiber and antioxidants. Millet aids in digestion, relieves constipation, lowers cholesterol and acts as a handy little prebiotic.
I love Tabouleh! This light, fresh, summery, heaven-in-abowl Lebanese staple goes well with everything from seafood to salsa. The fundamental ingredient of traditional Tabouleh is bulgur wheat (or the cheats version: cous cous) and so its a no no for those trying to cut back on gluten. As usual, mother nature comes through with an amazing array of delicious, nutritious alternatives.
Tough day? Can't deal with dinner? Can't face a complicated recipe? Need something more substantial chickpeas from a can?
If you're anything like me you can seriously loose the mojo to cook dinner sometimes, which is when the 'throw together' becomes your new best friend. These fool proof recipes are total wingers, no measurements required. Just find the ingredients in your fridge, garden and pantry, and throw them together. The ingredients have been tested by yours truly and they work awesomely together, the dressings are my tried and true favourites. Feel free to add your own creative flare and share your recipes in the comments below!
May the motivation be with you!
Hand on heart, this gluten free raw Zuchinni 'pasta' leaves wheat pasta for dead. Easy and delicious, it requires no cooking. A sprinkling of salt causes zucchini to weep, drawing out it's flavour, cutting the bitterness and softening the texture, and voila, you have noodles.
Another easy meal as we ease back into reality: spinach and lentil stuffed pumpkin, because who doesn't have a pumpkin lying around in their kitchen! This was too easy, except for the digging out the pumpkin, I admit I shirked that job off to Fraser.
