Good morning guys and gals! I realise I've been doing heaps of spinach recipes and I need to mix it up! The thing is, all my kale, carrot tops, beet greens etc are growing away in the garden so spinach has been the easy option while I wait for them to mature. BUT I have some cos. And cos is really amazing. Don't be a pale lettuce hater, these guys are packed with Vitamin A, C, folate, manganese and chromium. They're a great source of dietary fibre, B vitamins and minerals. Ingredients:
1 cup frozen pineapple 1/2 a cucumber 1 teaspoon freshly grated ginger (throw the fresh chunk in if you have a powerful blender) 1 handful of cos 1 handful of spinach (or more cos, I just didn't have much!) Coconut water or filtered water. Start by adding the liquid to your blender, followed by everything else. OBLITERATE! Until smooth. YURM |
