I gotta say guys, this is nothing short of a miracle. I first saw this recipe on Petite Kitchen (a beautiful food blog) and I just had to give it a go. It's a healthy take on the timeless favourite - sugary, buttery chocolate fudge - like you've never tasted before! Deliciously dairy, gluten and sugar free, this organic raw chocolatey treat owes its silky creamy texture to the weirdest ingredient: the humble black bean! I've since discovered you can use black beans in lots of cakes and desserts! Ingredients: 1 can organic black beans, drained (you could also use lentils) 4 heaped tbsp honey 4 heaped tbsp raw cacao powder 6 tbsp coconut butter (I didn't have coconut butter, so I used coconut oil, but I highly recommend coconut or cocoa butter for a fudgier texture) 1 tsp organic vanilla essence / extract a pinch of sea salt Line a small tray - baking tray, ice cream container, tupperware - with baking paper. Place all ingredients in to a high speed blender or food processor and blend until completely smooth. Use a spatula and pour in to the lined container. Place a piece of baking paper on top of the mixture. Press down until evenly smoothed out. Freeze for 1-2 hours until set. Remove from the freezer and transfer to a chopping board. Carefully peel off the baking paper, then cut in to bite size pieces. The result will blow you away! Keep it in the fridge or freezer, if you can resist eating it all at once!
