A magical union of creamy yoghurt, smooth vanilla, honey and tart berries, these iceblocks are a hit! Too easy to make, you can switch out the berries for mango, kiwifruit, or any other fruit that takes your fancy.
Ingredients 1 cup desired frozen fruit. I’ve used blackberries ½ cup honey, pure maple or coconut nectar 2 teaspoons vanilla paste or extract 2 cups coconut yoghurt or natural yoghurt 8 iceblock molds (or small paper cups) 8 popsicle sticks Method Add the vanilla and ¼ cup of honey to the yogurt and combine. Set aside. Combine fruit and the remaining honey in a saucepan and simmer gently until syrupy. Remove from pan and blend with a hand held blender until smooth. Arrange paper cups on a tray. Fill paper cups, 1 spoonful of fruit syrup in each cup, 2 heaped spoonfuls of of vanilla yoghurt. Repeat until all your cups are full. Apply a sheet of tinfoil over the top of the cups and pierce a stick through the centre of each iceblock underneath. The foil will keep your sticks in place as the pops freeze overnight. Once frozen, remove the foil, take an iceblock and run a little hot water over it until the cup easily slides off. Enjoy!! |
