RAW BROCCOLI SALAD WITH SMOKEY TEMPEH 'BACON'

This is really 2 recipes in one, because both the raw broccoli salad and the smoky tempeh bacon strips are super versatile. 

The broccoli salad is fresh and zesty with the perfect amount of crunch, and is a delicious complimentary base for any kind of dinner. Dish up a big plate of this salad and top with tempeh, tofu, chicken, fish or beef for a well balanced and delicious meal.

 The tempeh strips have a deeply smokey, salty, punchy flavour, perfect for burgers, a hearty breakfast, caesar salads - basically any dish that is traditionally designed for bacon!  Today I'm pairing them together for a tasty, easy summer dinner.

RAW BROCCOLI SALAD WITH MUSTARD & LEMON DRESSING

1 head broccoli
A handful of olives
A handful of cherry tomatoes
Coriander, roughly chopped


DRESSING
2 cloves garlic, crushed
1 tbsp french dijon mustard
2 Tbsp olive oil
Juice of ½ lemon
Sea salt and cracked pepper

Using a food processor, or simply a knife, chop the broccoli into fine florets. Add olives, tomato and coriander. 
Mix all dressing ingredients in a jar and drizzle over salad. Serve

SMOKEY TEMPEH BACON STRIPS

1 x 250gm package tempeh, sliced in long, 1-2mm slices (I use Tonzu organic tempeh)
2 Tbsp real maple syrup
1 teaspoonliquid smoke 
1/4 cup apple cider vinegar
1/2 teaspoon ground cumin
2 pinches of chilli flakes
2 Tbsp tamari
1 tablespoon organic extra virgin coconut oil, melted
Ground black pepper

Optional  - a splash of sriracha for extra spice! (always awesome to have on hand)



Slice your tempeh into long, narrow strips and set aside. 

In a medium sized pan, place all the ingredients. 
Mix over a low heat, and then immerse your tempeh strips in the marinade. Ensure all strips are well coated and simmer the tempeh until they are a rich brown and no liquid is left in the pan. Be careful though, not to let the sauce burn! 

Set aside strips to cool slightly (they get crispier as they cool) and add as a bacon substitute to all sorts of meals! Salads, pasta, hearty breakfasts, the list goes on!
