Getting home from work, in the traffic, in the dark. It doesn't help the creative cooking juices flow that's for sure! But while I was desperately avoiding a complicated meal, I also wanted something hearty and a little fancy too! So for dinner we had delicious roast salmon and vegetables: a one-dish-wonder and all done with 10 minutes prep and 30 minutes cooking!
There's nothing better than an easy yet fancy dinner after a long day :) This meal serves 2 but its easy to double or triple! You'll need: 3 red potatoes, cubed. You can use parsnips, sweet potato, anything really! 5 cloves garlic, halved 5-6 vine tomatoes (pricked with a fork) A generous helping of fresh Rosemary Salt and pepper Olive oil Balsamic Vinegar Sustainable salmon Fillets for two, boned Black olives Rocket Method Chop your veggies and lay in a roasting dish. Add the whole tomatoes. You want everything is snug - so choose your dish accordingly. Drizzle over olive oil, a dash of balsamic, your rosemary leaves and garlic. Stir so everything is well coated. Season well. Roast for 30-40 minutes at 200 degrees C, until golden At the 20 minute mark, cook the salmon. Simply cover it and roast for 12-15 minutes, depending on the size of your salmon. When everything is cooked, you can remove it and place the salmon on top of your veggies. Sprinkle with black olives and rocket. You could use fresh herbs too! Enjoy x |
