This pesto is a unique and delicious take on classic pesto. Whipped up in 5 minutes, delightfully zesty and rich, you won't believe it doesn't include Parmesan Cheese. Cashew, salt, lemon and olive oil give it a cheesy saltiness while rocket adds peppery punch.
2 packed cups of rocket (arugula)
1/2 cup roasted cashews
1 clove garlic
Juice and zest of half a lemon
1/2 cup extra virgin olive oil
1/2 tsp himalayan sea salt
Use a food processor to blend cashews, garlic and lemon zest until smooth. Add the olive oil, salt and lemon juice and blend until the pesto is well combined. Serve with tomatoes on homemade crackers or toasted sour dough.
